This recipe I stole off my friend, Melanie's, blog a year ago. We love it and make them a lot, especially during fall.
1 15 oz. can pumpkin
1 box cake (carrot and spice work well)
1 package chocolate chips
Mix pumpkin and cake mix. Mix in chocolate chips. Spoon onto cookie sheet and bake at 375 for 15-18 minutes.

Rolo Cookies
1 box devil's food cake mix
1 box chocolate cake mix
1/4 c. vegetable oil
4 eggs
1 bag rolos
Combine cake mixes, vegetable oil and eggs.
Put 1 rolo inside a golf ball size amount of badder
Bake at 350 for 10 minutes.
This is so easy and fail-proof (TRUST ME!).
If you want a bit more... add toffee chips to top of cookie prior to cooking.

Chocolate Chip Peanut Butter Cookies
Chocolate chip peanut butter cookies
2 cups flour
1 tsp baking soda
1 cup peanut butter (creamy)
3/4 cup butter (that's one stick)
3/4 cup white sugar
3/4 cup brown sugar (packed)
1 tsp vanilla
2 large eggs
2 cups milk chocolate chips (I use the whole bag)

Mix the flour and baking soda together in a bowl.
In a separate bowl cream together the butter (melted), peanut butter, sugars, vanilla and eggs. Slowly add in the flour mixture till it is all mixed together evenly. Add the chocolate chips. This mixture will be thick! I use my kitchen aid to mix, but you may want to mix with your hands (clean ones preferably) when you get to the adding the chocolate chips part. Bake at about 350-375 degrees for 8-10 minutes depending on your oven.
